Lancaster Campus of HACC offers culinary arts classesSushi, cake decorating, chocolate molding and more

The Lancaster Campus of Harrisburg Area Community College (HACC) will offer several culinary arts classes next month in its state-of-the-art culinary facilities.

Fine Cuisine - A "Tasting Menu" Presentation will be offered on Monday, March 1, from 6-9 p.m. This is an evening demonstration with a professional chef as he prepares an eight-course "tasting menu" that utilizes the chef's creative talents. This traditional French concept will include an appetizer, soup, fish, entrée and dessert course. The class also will include wine suggestions for the meal and other foods.

A Sushi Class will be offered Sunday, March 7, from 1-4 p.m. This is a hands-on class with restaurateur Tim Carr who will demonstrate and instruct in the art of sushi preparation. Class goals will be to prepare and taste nigirisushi, which is cooked rice with fish, seafood or other ingredients, and makisushi, which is cooked rice wrapped in nori (pressed seaweed) with combination fillings.

Students will learn that sushi is a cuisine that has unlimited suggestions based on personal preference. It is not just raw fish, and the art of sushi is easier than most people think.

A hands-on Cake Decorating course will be offered on five Sundays, March 14, 21, 28, April 4 and 18 from 1-4 p.m. Participants will start with the proper cake assembly, learn different icing types, use of a pastry bag and the many decorating tip styles.

They will learn the techniques used to make many different icing flowers, character cakes, animal figures, basketweave and lattice. This course is designed to help students learn how easy making and decorating beautiful cakes really is.

A class in Hors D'oeuvres/Appetizers will be offered on Thursday, March 18, from 6-9 p.m. The French translation of hors d'oeuvres is "outside the work," meaning apart from the main meal. Participants will learn how to make enticing and savory holiday appetizers that are not difficult to prepare. A variety of appetizers will be distributed to satisfy all the students for this gala.

Chocolate Molding for Easter will be offered on Wednesday, March 31, from 6-8 p.m. Students will learn the techniques of melting, molding and free-form chocolate art. The demonstration will show how quick and easy this very popular food item can be. Molds will be included for this class offered just in time for the upcoming holiday season.
