The Lancaster Campus of Harrisburg Area Community College (HACC) will offer several hands-on culinary arts courses this summer.

Knife Skills & Cutlery will be offered on Thursday, June 10, from 6-9 p.m. Participants can say goodbye to nicks, scrapes and cuts and learn to handle a knife like the pros. Topics covered will include knife cuts, guiding hand techniques, knife care and safety.

Assorted Salsa will teach participants how to produce several styles of vegetable and fruit salsa. Chef Wenger and the class will cover black bean and grilled shrimp salsa, authentic Mexican salsa, peach salsa, green chile salsa and roasted vegetable salsa. The class will be offered on Thursday, June 17, from 6-9 p.m.

Vegetarian Tastes is a class that can be enjoyed even by meat lovers. Offered on Thursday, June 24, from 6-9 p.m., this class will cover how fruits and vegetables can lend variety to home cooking. Participants will prepare and taste a variety of recipes that could be considered "comfort foods" to many people.

It's not just raw fish! A hands-on Sushi class will be offered on Sunday, June 27, from 1-4 p.m. Those attending will learn about one of America's most popular food trends. Restaurateur Tim Carr will demonstrate and instruct in the art of sushi preparation.

Class goals will be to prepare and taste nigirisuhi (cooked rice with fish, seafood or other ingredients) and makishushi, cooked rice wrapped in nori (pressed seaweed), with combination fillings. This is a cuisine that has unlimited suggestions based on personal preference. And it's easier than most people think!
